Ristorante Al Castello welcomes chef Niko Romito for a five-course dinner celebrating simplicity, precision and intensity of flavour
On 21 September, Ristorante Al Castello will welcome Niko Romito for a special dinner. The chef is at the helm of Reale, his three-Michelin-starred restaurant in the mountains of Abruzzo. Over the years, he has built an international reputation around a simple idea: intensity of flavour comes not from excess, but from precision.
Romito’s cooking takes each dish back to its essence. Few elements appear on the plate, each treated with extraordinary technical rigour. Low-temperature steaming, cold extraction and vacuum techniques allow ingredients to express their full character, while natural emulsions and extracts add depth without heaviness. It is an approach capable of transforming even the most familiar ingredients — from Savoy cabbage and onion, to his celebrated naturally leavened bread — making simplicity a form of exploration.
It is a philosophy that finds a natural affinity with Reschio, where raw materials, restraint and respect for what already exists have always guided the work. From this meeting comes the dinner at Ristorante Al Castello: five courses created especially for the occasion, where complex techniques allow the flavours of the ingredients to shine through.
